I have a node in a path with no incoming handle and no outgoing handle. I want this node to have an incoming handle but no outgoing handle. I select the Convert Point Tool and click drag the anchor and get two handles which is no good. So I undo and this time Alt+click the anchor point, but this gives me a single outgoing handle, which is not what I want: I wanted the incoming handle.

So, how can I force an anchor point to have an incoming handle but no outgoing handle, besides dragging the outgoing handle back so it overlaps with the anchor point (which is more of a hack and is not very neat)?

I'm not sure I understand, doesn't ALT-clicking give you the "incoming handle?" What do you mean by incoming/outgoing? could you link to an image maybe? –  Johannes Sep 16 '13 at 16:50
