@Peacockerie I'm not sure what exactly your answer adds. I disagree that the image area is called "artboard" because Photoshop CC has something separate from the regular images/canvases that are specifically called artboards, so I don't think the term I used was necessarily incorrect though I didn't pick that word ("image") deliberately, I simply wanted to avoid the word "canvas" again. And I did mention in my answer that they can be called background canvas to specify which one you're talking about.

When you Save As, it may "replace" your file in Illustrator but your original file will still exist (and you can open it back up). So if your file is AI and you save as PDF the AI file will still exist. You can always use "Save A Copy..." instead if you prefer to keep the original open.

@PearsonArtPhoto a general solution would be too broad, because the solution does change depending on the software. The best general solution is to simply find a way to create contrast, which as per my previous comment is often done via stroke or drop-shadow.

It depends what you're building your game with. On the web for instance it's trivial to add something like this, but at that point I think this question trends away from graphic design and more on tech support for whatever software you're using.

I think the key is to use a drop shadow or stroke around your text so it can show up on any background, that's how the provided screenshot handles it.

The issue is you're filling the area with color rather than deleting/clearing the selected area. You essentially want the inside selection to be transparent, otherwise it will print on top.
