I'm using the freehand tool (F6) in Inkscape but when I enable snapping, it snaps to a grid point. Also, as "cables" will be crossing between them, how can I add some curve at this point to differentiate both paths?

I suggest using the pen tool instead (Shift + F6). Assuming your drawings are vectors so you can snap to them, I would make a connector template like shown below. Line up the ends to make connections and with the direct selection tool (F2) select the nodes that make up the semi-circle and move them up/down left/right wherever to make a diagram.
