I have looked everywhere for this, and I am surprised I haven't been able to find anything yet. Is it too early to refer to SVG images in an html email signature? I am just so surprised that someone hasn't figured out how to include a fallback to an png or jpg so that this is possible. I am not knowledgeable enough to even determine whether this is possible.

See caniemail for a support chart. Short answer, it currently has pretty bad support. You should just create a PNG or JPG version of the image before you include it in your email. Feb 17 at 20:40
